Happy Wednesday everybody!
For those of you that have already started work – I am sure you’re already back into your routine and for those who are still on holiday and dreading returning – I wish you good luck!
Starting today, I will be making YouTube videos on quick, easy, healthy and – most importantly – delicious meals. The series will be (appropriately) called ’20-30 Minute Meals’ and will focus mainly on ‘main meals.’ So, breakfast, lunch and dinner. There will also be some drink and dessert ideas.
How it will work is that you will get the list of ingredients you will need in the blog post (or you can find it below the YouTube video in the description box) and then you watch and follow along to my video. I have simplified it to such an extent that someone who has never stepped into a kitchen could make the meals.

My first meal is live: it’s Salmon Roasted in Butter and Almonds with Green Beans and Walnuts.
This recipe serves two but it can double up as a meal for 4. Make sure you remeber to increase cooking time if you do this.
For the salmon you will need:
- Around 400g Salmon (this one is just under that)
- 40g butter
- 35-40g flaked almonds
- 1 Tablespoon lemon juice
- 2 Tablespoons chopped chives.
For the beans, you will need:
- 200g green beans
- 20g butter
- 25g walnuts
